Sugar Free Pumpkin Chocolate Chip Cookies

So many of us are watching our sugar intake these days, myself included. It’s hard for me because I admit I have a sweet tooth! Recently I’ve discovered the Lakanto sugar free sweeteners to bake with! They use monk fruit which is a natural zero calorie sweetener derived from a fruit. It has actually been around for centuries. I really like Lakanto’s chocolate chips. They have a smooth texture and work well in baked goods.

These cookies are not only sugar free. They are grain free and of course gluten free. You may also notice that I use olive oil in these. It works and it’s more heart smart! These cookies have lots of healthy ingredients that will make you feel good about serving them any time of day!

Preheat oven to 350°. Prepare a cookie sheet with parchment paper. Mix together the first six ingredients (dry) in a mixing bowl. In a separate bowl, whisk together eggs, olive oil, pumpkin puree, monk fruit, and vanilla. Once the wet ingredients are smooth and creamy, add to the dry mixture and mix well until incorporated. Drop golf ball sized portions on the baking sheet and bake for 15 minutes. Makes about 15- 20 cookies (depending on size!)
