Arugula and Stone Fruit Salad

This beautiful bountiful salad just screams summer! It’s a great combination of sweet and savory. Use up your summer harvest of stone fruit for the sweet. Then the mustardy flavor of the arugula, the nutty flavor of the quinoa and the macadamia nuts combine to make the savory. The basil and the goat cheese complement the rich flavors! Pair it with my orange blossom dressing and you’ve got a show stopper!

Feel free to sub out whatever stone fruit you have available. And slivered almonds or hazelnuts are a great sub for the macadamia nuts.

Ingredients

  • 4 c arugula

  • 1 1/2 c cooked quinoa

  • 2 c peaches (peeled and sliced)

  • 1/2 c plums (sliced)

  • 1/2 c fresh cherries (pitted and halved)

  • 1/4 c macadamia nuts

  • 1/2 c crumbled goat cheese

  • Orange Blossom Dressing

Ingredients

Combine the arugula and the quinoa and spread it out on a platter. Spread the fruit, nuts and cheese evenly over the greens mixture. Drizzle the dressing over the salad just before serving. Serves 8.
