This salad has got it all...color, crunch and creaminess! Pair it with my fresh orange blossom dressing for a bright finish. It’s also a great option to serve when you’re having friends over (e.g., Ladies Night In! Book Club Dinner)
5 oz. baby spinach
5 oz. arugala
¾ c grapes (halved)
¾ c sliced almonds
¾ c goat cheese (crumbled)
2 avocados (diced)
Prepare a salad bowl with all of the ingredients. Toss together with dressing.
TIP: Prepare all ingredients except avocado before guests arrive. Dice and add avocado and dressing just before tossing and serving. Serves 8.
