Italian Peach Bellini

The Amalfi Coast has the best peach bellinis on the planet, in my opinion! When trying to recreate them at home I have found that it is essential to have fresh and ripe peaches and good prosecco.

Enjoy this refreshing cocktail during peach season. And if you make my preserved canned peaches, you’ll be able to enjoy this drink all winter long too!

Ingredients

  • 4 Peaches* (peeled, pitted and cut up)

  • 3 t honey

  • 1 bottle prosecco

Instructions

Make a peach puree by combining the peaches and the honey in the blender and blend on high until mixture is pureed. Put puree through a sieve and discard solids. Store puree in the refrigerator until ready to serve.** Just before serving, add 2 t of puree in a champagne glass. Fill remainder of the glass with the prosecco and stir gently. Garnish with peach slices. Serves 6.

*Use either fresh, ripe peaches or your preserved peaches. The taste of the peaches will greatly influence the taste of your bellini!

**You will have puree left over. Keep it refrigerated and use it on a frozen dessert, on pancakes or in a smoothie!
