Bookwalter Binge Power Booster Bars

These bars are the perfect pre or post-workout treats for Bingers, volunteers, and spectators! They are full of nutritious ingredients that will keep you fueled throughout the day. Enjoy them as a snack or even for dessert!

Ingredients

  • 1 c almonds

  • 1 c cashews

  • ½ c sunflower seeds

  • 2 T chia seeds

  • 1 c medjool dates (about 20)

  • 2 T unsweetened cacao powder

  • 1 T cinnamon

  • 2 t vanilla

  • 2 egg whites

  • ½ t sea salt

Instructions

Preheat oven to 350° and prepare an 8’ baking dish. Put all of the dates in a small bowl of hot water. Let them soak for 15 minutes. Remove the dates, pit them, drain them and put aside.

Put the almonds, cashews, sunflower seeds and chia seeds in a food processor. Process until fine, about 1 minute. Add dates, cacao, cinnamon, and vanilla to processor and process on high until completely blended. Add in egg whites and process until a dough forms. Spread dough in prepared baking dish. Sprinkle salt evenly on top of the out mixture. Bake for 20 minutes. Allow them to cool completely before cutting. Makes 12 bars.
