Get your veggies on with this delicious treat! A medley of splendid super foods makes up this batch of moist and creamy brownies. Top them with date sweetened frosting, a scoop of frozen dessert or just eat them plain. You’ll think your cheating but you’re not! Share them with friends or bake a batch for the kids!
1 large ripe avocado (peeled and pitted)
1 c sweet potato puree (farmer’s market organic)
½ c cacao powder
½ c pure maple syrup
1 t vanilla
1 T coconut oil (softened)
½ t baking powder
½ t baking soda
½ t salt
Combine all of the ingredients in a mixing bowl. Use hand mixer, stand mixer or food processor to combine all of the ingredients. Mix for several minutes until avocado is completely combined and there is a creamy texture. Pour into a 8” x 8’ sprayed dish. Cook at 350° for 40 minutes. Allow to cool completely, then top with my date sweetened frosting or serve with a scoop of DiNoci’s vegan frozen dessert.
