When the sweetness of peaches meets spicy add-ins, you’ve got yourself the perfect combination for an extraordinary salsa! Serve this combination over fish, pork or chicken or use it as a starter and serve it with chips.
2 c fresh peaches (diced, about 4 peaches)
1 Roma tomato (diced)
½ red bell pepper (cored and diced)
1 jalapeno pepper (seeded, membrane removed, chopped)
½ red onion (diced)
¼ c fresh cilantro
2 t honey
Juice of 1 lime
¼ t chili powder
½ t kosher salt
Combine the cut peaches, tomato, peppers, red onion and cilantro in a medium mixing bowl. Make sure the seeds and membrane are completely removed from the jalapeno to avoid too much heat. Add the honey, lime, chili powder and salt. Mix well and refrigerate before serving. Makes about 3 cups.
