Savory Mushroom Sauce

This blend of fresh crimini mushrooms, onion, olive oil, white wine, chicken stock and spices creates a warm, savory gravy for any main course. I like to serve this over my goat cheese and spinach stuffed chicken for a rich, creamy finish.

Ingredients

  • 1 lb. crimini mushrooms, thinly sliced

  • 1 medium white onion diced

  • 1 T olive oil

  • ¾ c chicken stock, divided

  • ½ c dry white wine

  • ½ t salt

  • ¼ t pepper

  • 1 T arrowroot starch

Instructions

Saute mushrooms and onions in a saucepan until vegetables are soft. Stir in ½ c chicken stock, wine, salt and pepper. At this point you can refrigerate mixture until just before serving. When you are ready to serve, combine arrowroot starch and remaining ¼ c chicken stock in a small container. Heat up mushroom mixture to boiling point. Then turn to low heat and mix in arrowroot starch mixture. Stir continuously until sauce is thickened. Smother your main course with sauce. Place remaining sauce in a gravy pot available on the table. Serve immediately. Serves 6-8.
