Peanut Butter Chocolate Krispie Bon Bons

You need to try these sweet balls of deliciousness! They are easy and no bake.  I use peanut butter as a base, but you can substitute any nut butter.  I sneak in ingredients like flax seed and brown rice krispies to boost the nutritional content.  You’ll feel good about eating and serving these treats.

 

Ingredients

1 c natural creamy peanut butter

¼ c honey

1 ½ c brown rice crisps

¼ c ground flaxseed

1 c cacoa chips (I use enjoy life dark morsels)

1 t coconut oil

¼ t sea salt

 

Instructions

 

Combine the first four ingredients in a mixing bowl.  Work to mix together thoroughly.

Roll quarter sized balls and place on baking sheet prepared with parchment paper.  Place in freezer for at least 15 minutes to set. 

Melt oil in a small saucepan.  Add cacao chips and continue to stir over low heat until chocolate is melted.

Use a fork to dip an individual ball in the melted chocolate.  Cover completely with chocolate and tap off any extra chocolate.  Put back on the parchment paper and repeat for all of the balls.  Sprinkle salt on the chocolate balls. Put tray back in the freezer until set.

Store bon bons in the freezer in a tightly closed container.  Makes 16-20 bon bons.
