Healthy Baked Meatballs

Here’s a classic comfort food with a nutritious twist! These meatballs are baked which makes them tender on the inside and crispier on the outside. They are the perfect meal prep food because everyone in the family loves them and they are so versatile.

I like to serve my meatballs with my extra green pesto sauce or a marinara sauce. Serve them over gluten-free pasta, zoodles, on a sub, crumbled over a salad or on their own. Like I said, so versatile! Keep a batch in the freezer and take out as needed!

Ingredients

  • 1 lb. ground turkey

  • 1 lb. ground turkey sausage*

  • ½ c brown rice flour

  • 1 T tapico flour

  • 2 t garlic powder

  • 1 t onion powder

  • 1 T Italian spices

  • 1 t salt

  • 2 eggs

*I like a little kick in my meatballs so I use spicy Italian turkey sausage. If you prefer a milder flavor, use mild Italian sausage.

Instructions

Preheat oven to 375°. Put all of the ingredients in a bowl and mix together until thoroughly combined. Use wet hands to form golf ball size meatballs. Place on a baking sheet. Bake for 30 minutes. Makes 16 – 18 meatballs.
