Cherry Chocolate Crunch Ice Cream

Any Cherry Garcia fans out there? My cherry ice cream is similar except it’s dairy free, sugar free, and gluten free! It’s full of fresh fruit and made with only whole food ingredients. It’s naturally creamy and sweet!

Packed with vitamins and minerals, this guilt free treat is one your can eat everyday and feel good about it!

For best results, invest in an ice cream maker. It’s worth it! Personally, I’ve had great results from Cuisinart’s 2-quart Frozen Yogurt-Sorbet & Ice Cream Maker.

Ingredients

  • 2 1/2 c fresh pitted cherries (divided)

  • 1 banana

  • 1 t vanilla

  • 1 can of light coconut milk

  • 1/4 c sweetened cacao nibs (sub dark chocolate shavings)
    I use Navitas Sweet Nibs

Instructions

Blend 2 cups of cherries, the banana, vanilla and coconut milk in a blender until smooth. Chop the remaining 1/2 cup of cherries in quarters and set aside. Place blended mixture in an ice cream maker and spin until consistency is at soft serve thickness. Add in chopped cherries and cacao nibs (or chocolate shavings) and continue to process until ice cream is at desired thickness. Spoon out separate servings and garnish with chocolate nibs or shavings and a cherry on top! 🍒

If you don’t have an ice cream maker, you can place blended ingredients in a glass container and freeze in freezer. Add toppings and enjoy! Makes about 1 quart.
