Spicy Roasted Chickpeas

This crispy and savory healthy snack is a great addition to your meal prep routine. Have this protein and fiber-filled snack at the ready by making a batch each week. They make great additions to salads, soups, bowls, or eat them by the handful! Try them alongside my high protein chicken salad for a crunchy complement.

Ingredients

  • 2 15 oz cans of chickpeas/garbanzos (drained and blotted dry with a clean dish towel)

  • 1 T Olive oil

  • 1 t chili powder

  • ½ t paprika

  • 1 t salt

Instructions

Preheat oven to 400°. Combine all of the ingredients in a mixing bowl. Spread out on a baking sheet. Bake for 25 minutes, turning once after 15 minutes. Allow them to cool and store them in an airtight container at room temperature.

Tip: After baking time, turn off heat and leave chickpeas in the oven until the oven cools. This will create even an even crispier texture.
