Extra Green Pesto

This easy pesto recipe has added green herbs that enhance the flavor and the nutritional value. The variety of greens combined with heart-healthy fats make it the perfect condiment for a variety of dishes (try it on my green pesto salmon with crunchy cashews!). Use what you need and freeze the rest.

Ingredients

  • 3 c fresh basil

  • 1 c fresh parsley

  • ¼ c fresh chives

  • 1/3 c pine nuts

  • ¼ c cashews

  • ½ t salt

  • ¼ t pepper

  • ½ c + grated parmesan*

  • 2 t fresh lemon juice

  • ½ c olive oil

Instructions

Place all ingredients in a food processor and mix on high until thoroughly combined to a creamy consistency. Add salt and more parmesan to taste.

*TIP: For a dairy free version, leave out parmesan and add ¼ c additional cashews.
