Abe and Louie’s Butter Lettuce Salad

When we lived in Boston, Abe and Louie’s was our favorite steakhouse to treat ourselves to. Their house salad was a menu favorite and I took it upon myself to replicate it for my own table.

I’ve been back many times over the years and I’ve found their salad has evolved and changed, but I like my original version. It’s the perfect salad for a crisp fall evening! Butter lettuce is a beautiful green; it’s light, fluffy and looks so nice on a plate. Elegant and delicious!

Ingredients

  • 3 heads butter lettuce (trimmed and cut into smaller pieces)

  • ½ c chopped pecans

  • ½ c crumbled gorgonzola cheese

  • 2 green apples (cored and sliced)

  • 1/3 c Balsamic Dijon dressing

Instructions

Combine the first three ingredients in a salad bowl. Just before serving, add the dressing. Plate the salad on individual plates and top each salad with several slices of apple. Alternatively, you can make one big salad by combining all of the first three ingredients in a salad bowl. Add the apples and dressing just before serving. Serves 6.
